Apple Cider Vinegar morning routine

Apples are crushed and left to ferment in what you would call the most natural way possible. We don’t add water, or Sugar, or commercial yeast. We also do not supplement the fruit with concentrate. Literally only apples allowed.

(Point to note here is: Most other manufacturers add water, Sugar and Commercial yeast. More sugar and added water + added commercial yeast allows for huge volume of the product and speeds up the process and yeast goes into overdrive to break the sugar down and convert it into Cider. Basically they manipulate the process to get higher volumes of product)

Another important factor in Novus Organics ACV is (as mentioned before) that we do not add any external/commercial yeast. Yeast naturally forms on apples and we leave the yeast to ferment the apples. Fermentation is as natural as it gets.

Once the Master Vinegar quality checks the batch for consistency of the ferment, the next process in fermentation starts where healthy load of pioneering bacteria are introduced to the cider to breakdown the alcohol to convert it into acetic acid.

Novus Organics ACV is made from 100% organic apples grown on the clean and pristine South Island of New Zealand. South Island of New Zealand is amongst the least populated area on earth. The orchards where the apples come from collectively have only around 500 or so people. Pollution is literally non-existent because there is no industrial footprint in this area. The area is lush green and crisp pure, known for natural scenic wealth of nature and organic farming practices.

These orchards have a very rich soil conditions, which are tested and certified annually. Our growers are generational farmers who believe in organic farming hence have joined the certified organic movement which ensures no chemicals, industrial synthetic pesticides are ever used.

Environment where the fruit grows and fermentation happens

New Zealand enjoys cold temperatures throughout the year. South Island in winter ranges from 1 degree C to 10-12 degrees maximum. Summer temperature ranges from 15-20 degrees and occasionally (but rarely) reaching 25 degrees.

True to our form, we let the apples ferment at a natural pace and in our case, a prolonged fermentation process ensures the pioneer yeast to thoroughly ferment the apples. This allows for a better flavour profile in the ACV and also delivers a much diverse variety of probiotics (healthy bacteria).

All the way the Master Vinegar Maker is responsible to regularly test the batch and ensure quality is maintained. The end product is unfiltered, unpasteurised natural vinegar containing the live vinegar mother. Because it contains loads and loads of probitic goodness we bottle the product at its actual acidity level and at full strength which means the product is undiluted ie we don’t add water for customers, they can do it themselves according to their own taste. Unfiltered and unpasteurised we protect the goodness in the product each step of the way. The product is Gluten free, naturally cholostrol free and vegain. We have the product certified by USDA and ACO.
